Salmon - Broccoli Puree Recipe

My Favorite Ballerina Receipt: Soft, Light & Flavory Broccoli Puree with Fried Salmon in Garlic-Honey-Soy Sauce.

I discovered this receipt a few years ago and since then I'm totally in love with it! This light, flavorful dish has become one of my most preferred dinner choices over the past 2 years. It's also Rene's favorite meal, and I've cooked it so often, that I could probably make it in my sleep!

One of the joys of cooking is being able to improvise, so sometimes I like to vary between normal potatoes and sweet potatoes. Sometimes I enjoy playing around a bit and I adjust the recipe depending on what I prefer each time. They both taste delicious within this combination.

Salmon has been of my favorite ballerina meat choices hence it's packed with so many nutrients, it has anti-inflammatory omega-3 fatty acids, it's a super brain booster, it's known to be a "heart-healthy" fat choice and besides that is is a low calorie, high protein meal!

Salmon - Broccoli Puree

Ingredients:

For 2 servings - Ready in 45 min

  • 4 potatoes (360g)

  • salt and pepper (to taste)

  • 1 onion (80g)

  • Olive oil (3 tbsp. or 40,5ml)

  • Fresh parsley

  • Vegetable broth (50 ml) - use the broccoli water and flavor it

  • 2 salmon fillets (300g)

  • 1 garlic glove (3g)

  • Honey (1 tbsp., 20g)

  • Soy sauce (60ml)

  • 1 broccoli head (340g)


How to prepare:

  1. Peel the potatoes, cut into pieces, place in a pot and add just enough cold water to cover them completely. Salt the water.

  2. Bring the water to a boil and simmer the potatoes over medium heat for approx. 20 minutes.

  3. In the meantime, separate the broccoli into florets and place in a second pot with water. Bring to a boil and then simmer for approx. 20 minutes.

  4. Peel and cut the onion into small pieces. In a pan, heat ⅓ of the olive oil and sauté the onion pieces for approx. 4 minutes, stirring occasionally.

  5. Pluck the parsley leaves from their stems and finely chop.

  6. Drain the potatoes and broccoli.

  7. In a pot, combine the potatoes, broccoli, onion pieces, vegetable broth ,salt, pepper and 1/2 of the remaining olive oil. Use a hand mixer to puree until creamy and keep warm.

  8. In a pan, fry the salmon filets with the remaining olive oil over medium heat for approx. 4 min on each side.

  9. In the meantime, peel and crush the garlic into a bowl.

  10. Combine the honey and soy sauce with the garlic and mix well.

  11. Pour the sauce over the salmon and fry for approx. 1 additional minute.

  12. Split the broccoli puree onto plates and top with the salmon,

  13. Enjoy!
